Based on observation and interview, the manager failed to ensure that frozen foods were stored at a temperature of 0° F or below. Findings include: 1. During an environmental inspection of the facility, the Compliance Officer observed a freezer in the commercial kitchen in the 7700 South Vivaldi Court building. The freezer had a thermometer which displayed 4° F. 2. During an environmental inspection of the facility, the Compliance Officer observed a freezer in the commercial kitchen in the 13775 East Langtry Lane building. The freezer had a thermometer which displayed 5° F. 3. The Compliance Officer observed a temperature log attached to the Langtry Lane freezer included the following entries: 3/1/25, 4; 3/2/25, 3; 3/3/25, -5; 3/4/25, -8; 3/5/25, 8; 3/6/25, 4; 3/7/25, 33; 3/8/25, 1; 3/9/25, -10; 3/10/25, 5; 3/11/25, -8; 3/12/25, 2; 3/13/25, 32; 3/14/25, 3; 3/15/25, 2; 3/16/25, -7; 3/17/25, -10; 3/18/25, 25; 3/19/25, 10; and 3/20/25, 4. 4. In an interview, E1 acknowledged frozen foods had not been stored at or below 0° F. Technical assistance for this rule was provided during the on-site compliance inspection conducted on January 9, 2024.
